Ingredients:
1 cup quinoa, rinsed
2 cups water or low-sodium vegetable broth
1 cup steamed broccoli florets
1 cup diced bell peppers (red, yellow, or green)
1 cup shredded carrots
1/2 avocado, sliced
1/4 cup chickpeas (optional for added protein)
2 tablespoons olive oil or avocado oil
Juice of 1 lemon
1 teaspoon cumin powder
Salt and black pepper to taste

Instructions:
Rinse the quinoa under cold water and cook it in water or vegetable broth according to package instructions. Once cooked, fluff with a fork and set aside to cool slightly.
